Sweet Tooth: Flourless Peanut Cookies

Sweet Something

I came across cheap peanut butter in the supermarket the other day. I can never resist such supermarket discounts, especially when the goods aren't nowhere near expiry date.



Flourless Peanut Butter Cookies

1 cup peanut butter
1 egg
1 cup sugar ( I used slightly less)
1/4 tsp baking soda
1 tsp salt
1 tbs vanilla extract
chocolate, chopped

   Preheat oven to 175 degree Celsius  

   Mix egg and sugar with fork. Add in peanut butter. Stir well.

   Add in salt, vanilla extract and baking soda. Stir to combine.

   Shape dough into 2cm balls. Place them 3cm apart on a lined cookie pan. Flatten with the back of a fork.

   Bake for 15min or until edges are slightly brown. Cool

   Melt chocolate over double boiler. Pour into piping bag. Decorate. Let chocolate harden before storing.

Summer's Buddy: Watermelon Granita Soda

"Cold & Refreshing"
The summer heat is just getting worse. Almost unbearable. Every time i go out for a short errand, i always come back with sunburn, even though i have the sunblock on. And the TV is always about the droughts, floods, global warming, bla bla. Depressing, really.

I really need to cool this heat off. I need a drink, something cold. and not alcohol because i am trying to keep that at minimum. In this case, no sugar added either, so no guilt in having them by the bowl full.

Watermelon Granita Drink

Watermelon flesh, cubed
Sprite or 7-up soft drink, cold



  Puree watermelon in a blender until smooth. Sieve it to remove all the seeds

  Pour into ziplock bag and freeze. Break the frozen bits every 30 min for 4-5 times so we will get small ice crystals instead. (note: This is good for Popsicle too)

To serve:
  Pour a bit of soft drink into pretty see through glass. scoop granita into it and garnish with a mint leaf.

Something Sweet, Something Salty: Pumpkin & Peas

Why they say pumpkin is good:

1. A lot, a lot of beta-carotene A.K.A vitamin A. This helps to produce the detoxification enzymes in the body. Its like an imaginary shield against the free radicals

2.It acts as a de-worming agents that paralyze and eliminate intestinal worms from digestive system.

3. Plenty of fiber

...and endless more reasons

Why I say pumpkin is good:

1. Cheap

2. Sweet

3. Delicious

I made this for quick lunch, but of course they will make a really good side dish when hosting a dinner party. (Just cube the pumpkin evenly for a nice presentation)

Pumpkin and Peas

1/2 Pumpkin
A handful of peas
1 tbs pre-made caramelized onion

   Halve a pumpkin, cut the ends and scoop out the seeds and stringy parts. Steam until tender but not mushy. Cool slightly before slicing it or cutting it into nice cubes if you have guests to impress

   Heat 2 tbs of olive oil in the pan over medium-high heat. Add in the pumpkin. let them caramelize and brown on all sides.

   Add 1/2tsp salt, caramelized onion and peas. toss over heat to meld the flavor.

   Serve. Sprinkle with store-bought pumpkin seeds for garnish, or chopped parsley, or toasted sesame seeds. whichever you choose, it will be good

Going Ga Ga

It's been some time since I have moved here, but at times i still find it hard to understand some of the stuffs going on here.

A couple of week ago, while I was heading out, I saw this woman in a blinking T-shirt. My jaw just dropped. When I meant blinking T-shirt, it really was. Bright LED lights somehow (I don't even want to know how) fused in it. She looked like a walking torch. Who would want to be a torch?

I recalled seeing this 40-something woman, big tummy (no, no, she wasn't pregnant) walking around with her friend in this really, really crowded place wearing a top covering til her bellybutton and no bottoms. she was just wearing this black sheer, see-through panty hose!! I can see her underwear underneath it so clearly. The prints on her underwear, her buttocks, her not-small thighs, all so clearly displayed. GAWD~ People were looking at her, but she just casually walked and talked with her friend as if everything was normal. I wonder if her "friend" was a foe-in-disguise.

In here, weird things happen. But some stuffs can be interesting too.
